Asparagus (Asparagus officinalis) is a heat-loving herbaceous plant with a fleshy rhizome. It can grow in one place for up to 15-20 years and produce a crop of shoots. It is a very valuable dietary and medicinal crop. It treats dropsy, cystitis, kidney stones, hypertension, dilates peripheral vessels and improves liver function. Asparagus is propagated mainly by seeds, which are soaked in warm water for 3-4 days before sowing, changing the water daily. Sow to a depth of 3-4 cm, 2 seeds per nest at a distance of 10 cm from each other. In the fall, the stems that have grown are cut and removed, and the remaining roots are covered with a small layer of humus, leaves, etc. In the 2nd year, the seedlings are dived onto the ridge at a distance of 40 cm from each other. After 3-4 weeks, the survival of the plants is checked and new ones are planted. When the height of the stems reaches 15 cm, soil is poured into the furrows and the soil is leveled. In the fall, the stems are cut back and burned again. Harvesting young asparagus shoots begins with a 3-year-old plantation in early spring. First, asparagus that has grown underground is harvested, and then shoots that have grown 15-20 cm above ground level. Shoots should be harvested daily, as they grow very quickly. Shoots should be immediately wrapped in polyethylene and put in the refrigerator.
