A very valuable biennial crop, intended for dietary nutrition, especially indicated for diabetics. In the first year, long, black, non-branching roots are obtained, up to 30 cm, with black skin and white pulp, and a powerful rosette of large lanceolate leaves. In the second year, the plant reaches 1.5 m in height, branches strongly and blooms. The flowers are large, yellow. Young leaves near the rosette and peeled sweet roots are used in the form of salads and side dishes, resembling asparagus.
