It is a truly architectural plant with branching stems, each topped with a profusion of light blue flowers and large pinkish-white bracts. The flowers are attractive and enhanced by the lampshades of large petioles that surround them. They stand above large, fragrant, silver-green leaves that can grow up to 23 cm (9 in) long. The flowers are a magnet for bees and butterflies. The plant thrives in poor soil, resists slugs and other pests. In full sun, with little water, the large gray-green leaves remain attractive throughout the season. Its uses are significant: a flavor for wines, an oil for perfumes, potpourris and incense. In medicine, sage relieves stomach ailments and even stops aging. In cooking, its greens are used exclusively in dried form. It is added to soups, rice and egg dishes, including salads containing these products. It is especially good with meat, especially very fatty ones - pork, lamb, as well as poultry (duck, goose) and game. Sage is often used as a seasoning for minced meat. It is used to improve the taste and aroma of boiled fish.
